Ryokujuan Shimizu

Ryokujuan Shimizu is a konpeito specialty shop founded in Kyoto in 1847. Its production method has no recipe, and mastering the techniques of making konpeito while honing all five senses is said to take 20 years: “10 years of coating with syrup and 10 years of using the spatula.” Through the skills passed down from the founder and preserved over generations, the shop has created as many as 90 flavors and continues to pursue one-of-a-kind konpeito that combines tradition and innovation.
